The Cup
This is a washed coffee from the baba Budan Giri area of India. The cup is rich with notes of sweet baking spices, a buttery chocolate body and light notes of hazelnut.
About The Producer
Gundikhan Estate is owned by the Saif Ulla family; Saif is the third generation to grow coffee on the plantation. The farm is located at an altitude of 1380-1600 meters in the Baba Budan Giri area.
The farm shares boundaries with the Bhadra Tiger Reserve and provides a haven for many species of birds, insects, reptiles and amphibians. It also acts as a wildlife corridor.
Brewing Recipes
Chemex
32g of medium ground coffee (#6 on the Baratza Vario)
500ml of boiled water.
Prime filter with water then add the 32g of ground coffee.
Starting from the centre saturate all the grounds with 70ml of boiling water. Let bloom for 30 seconds.
Continue to pour in a circular motion starting from the centre. Pour at a slow steady pace until the remaining 430ml of water is finished.
Give the draining coffee a stir, let drain then serve!
Aeropress
16g of medium – fine ground coffee (#5 on the Baratza Vario)
260ml of boiled water.
Prime filter with water then add the 16g of ground coffee.
Starting from the centre saturate all the grounds with 30ml of boiling water. Let bloom for 20 seconds.
Pour remaining 230ml of water slowly. Let steep for 1 minute then plunge.
