What’s in the cup is complexity that is loaded with intense coffee flavour. Savoury spice accompanied with the syrupy taste and body of molasses with a touch of lemon zest depending on the brew method.

This is a washed coffee from the Timuza Coop of Eastern Highlands. Timuza farmer group is situated in the Eastern highlands province approximately 3km South-West of the township of Kainantu in the Kainantu district, a few kilometers away from the main highway, along the Okapa road.

Growing Coffee in Papua New Guinea

Coffee is deeply ingrained in the cultural fabric of Papua New Guinea. Many coffee-producing communities are small, family-owned farms that have been cultivating
coffee for generations. This coffee comes from small holder producers with 0.25 to 4 hectares of land on average.

Brewing Recipes

Hario V-60

17.5g ground medium (#5 on Baratza Vario)

280ml of 195F water

French  Press

34g of coarse ground coffee (coarsest setting on Baratza Vario)

500ml 195F water

Steep for 4 minutes, plunge then serve.

Chemex

32g of medium ground coffee.

495ml of 195F water.

Prime filter and discard water.

Add grounds then saturate with 90ml of boiling water. Let bloom for 20 seconds.

Starting from the center, in a circular motion slow pour the remaining 405ml of water over the grounds.

Give the draining water a stir. Once fully drained you are ready to serve!
