Roaster Notes

Each fall, we handcraft a special seasonal coffee blend with notes of spice cake, molasses, and dried fruit. Featuring beans from Costa Rica, Papua New Guinea, and Colombia, this limited-edition roast brings cozy, festive flavour to your cup. It’s a coffee that we’ve roasted for several years and is our most popular seasonal coffee.

The Cup

The Costa Rica in addition has well developed notes of nougat, sweet mandarin and milk chocolate The third addition, Papua New Guinea, is a washed (wet processed) coffee. Our PNG selection has a savoury, spicy note that adds a welcoming warmth to the mix. The fuller, richer, roasted tastes of comfort foods are more appealing as the season turns cooler. Think about beer; porters and stouts are more popular in winter. Fall foods like pumpkin and apple pies with cinnamon and other warming spices. Richer foods like stews and roasts make their way onto our tables. Our Seasonal anaerobic Colombia adds that spark of dried fruit and bright aroma.

Our target for this coffee is like a sticky toffee pudding, molasses and spice combining with a subtle dried fruit note on top to add complexity. You can really imagine having this coffee with a slice of pumpkin pie, or a little slice of Grandma’s fruit cake. That’s our aim. You could even indulge yourself with a little whipped cream to top off this coffee! The only let down? This coffee is only available until January 1st. So we’ll enjoy it while it lasts!

Chemex

The Chemex is a pour-over coffee maker featuring a glass carafe and thick paper filters. By slowly pouring hot water over the coffee grounds, you extract flavours with clarity and brightness. Consequently, this slower filtration produces a refined cup with delicate flavors and a clean, crisp finish. Moreover, it highlights the coffee’s unique characteristics while maintaining a balanced and elegant profile.

Recipe
  • 33g medium-ground coffee
  • 500ml water at 200°F
Steps
  1. Prime the filter with hot water, then add the grounds evenly.
  2. Pour 70ml water over the grounds to saturate, stirring gently if needed.
  3. Continue pouring the remaining water slowly, starting at the centre and circling outward.

 

French Press
Recipe
  • 22g coarse-ground coffee
  • 400ml water at 200°F
Steps
  1. Pour 400ml of water over grounds then stir to ensure even saturation.
  2. Steep for 4 minutes. Plunge and serve.
