Microlot

The Cup

This limited Colombian microlot features the rare Sudan Rume variety, grown at Jardines del Edén in Quindío. Sourced from one of the genetic birthplaces of Arabica, this exceptional coffee reflects both heritage and innovation.

Light–medium roasted to highlight clarity and sweetness, it offers a vibrant cup with notes of strawberry compote and Meyer lemon, balanced by a smooth cocoa butter finish. Elegant acidity and a silky, tea-like body make this microlot both expressive and refined.

 

About the Producer

Jairo Arcila is a third-generation coffee grower from Quindío, Colombia. He is married to Luz Helena Salazar, and together they have two children, Carlos and Felipe Arcila, co-founders of Cofinet. Jairo began his career working for Colombia’s second-largest coffee exporter, where he served as Mill Manager for more than 40 years until his retirement in 2019.

In 1987, Jairo purchased his first coffee farm, Finca La Esmeralda, where he planted his first lot of Caturra. While working full time, he was also able to generate income from coffee production on his farm. Through careful saving and dedication, Jairo gradually expanded his operations, acquiring five additional farms: Villarazo, Mazatlán, Santa Monica, Maracay, and Buenos Aires.

During the harvest season, Jairo’s farms provide employment opportunities for many local workers, creating a meaningful economic impact within the community.

Yellow Sudan Rume

Sudan Rume is a rare landrace variety originating from the Boma Plateau in South Sudan, near the Ethiopian border—one of the genetic birthplaces of Coffea arabica. Named after the Rume region where it was first discovered, it is prized for both its exceptional cup quality and genetic importance. Closely related to wild Ethiopian coffees, Sudan Rume offers valuable genetic diversity for developing disease- and climate-resilient varieties.

Though low-yielding and delicate to grow, it delivers an extraordinary cup, known for its clean, complex profile with vibrant florals, intense sweetness, bright acidity, and notes of bergamot, peach, and tropical fruit. Due to its rarity, it is produced in limited quantities and commands premium prices.

In Colombia, Sudan Rume is being cultivated experimentally by innovative producers. At Cofinet, we explore its potential across different terroirs and proudly grow it at Jardines del Edén, where it has thrived and consistently produced outstanding results.

 

Brewing Recipes

Espresso

Espresso brews by forcing hot water under high pressure through finely ground beans, producing a strong, full-bodied shot topped with golden crema. Moreover, in addition to enjoying it on its own, espresso serves as the base for drinks such as cappuccino, latte, and Canadiano. This method emphasizes rich flavor and smooth texture in every cup.

Pour Over

Pour over brewing involves slowly pouring hot water over coffee grounds in a filter, allowing full extraction of flavours and aromas. Compared to the Chemex, it uses thinner filters, resulting in a cup with more body while still highlighting the coffee’s unique nuances. In addition, the controlled pour emphasizes the bean’s subtle characteristics and complexity.

Recipe
  • 16.5g coffee ground on #7 (Baratza Vario)
  • 290ml water at 200°F
Steps
  1. Pour 60ml water to saturate the grounds, then let sit for 20 seconds.
  2. Add the remaining water in a steady pour, starting at the centre and circling outward.
  3. Stir lightly for even extraction.
