The Cup
This Medium-Light Roast Seasonal Microlot showcases the rare Sudan Rume variety, grown at Jardines del Edén in Quindío, Colombia. Notably, this region sits near one of the genetic birthplaces of Arabica, blending heritage with modern innovation.
Roasted lightly to medium-light, this coffee highlights clarity and natural sweetness. First, bright notes of strawberry compote and Meyer lemon lead the cup. Then, a smooth cocoa butter finish brings balance and softness. As a result, the cup feels elegant, expressive, and refined, with lively acidity and a silky, tea-like body.
About the Producer
Jairo Arcila is a third-generation coffee grower based in Quindío, Colombia. Before focusing fully on farming, he spent over 40 years working as a Mill Manager for Colombia’s second-largest coffee exporter. He retired in 2019, bringing decades of technical expertise back to his own farms.
Earlier, in 1987, Jairo purchased his first farm, Finca La Esmeralda, where he planted Caturra. Over time, and through steady dedication, he expanded his work to include five additional farms: Villarazo, Mazatlán, Santa Monica, Maracay, and Buenos Aires. Meanwhile, during harvest season, his farms provide vital employment for local workers, strengthening the surrounding community.
Yellow Sudan Rume
Sudan Rume is a rare landrace variety originating from the Boma Plateau in South Sudan, near the Ethiopian border. Because of this origin, it holds significant genetic value within Coffea arabica. Closely related to wild Ethiopian coffees, it plays an important role in developing climate- and disease-resistant varieties.
Although Sudan Rume produces low yields and requires careful cultivation, it rewards growers with an exceptional cup. Typically, it shows vibrant florals, intense sweetness, and bright acidity, alongside notes of bergamot, stone fruit, and tropical fruit. Consequently, it remains scarce and highly sought after.
In Colombia, innovative producers now cultivate Sudan Rume experimentally. At Cofinet, this variety thrives at Jardines del Edén, where it continues to deliver outstanding and consistent results.
Brewing Recipes
Espresso
Espresso uses high pressure to extract concentrated flavor from finely ground coffee. As a result, it delivers a bold shot with rich texture and golden crema. In addition to drinking it straight, espresso forms the base of drinks like cappuccino, latte, and Canadiano, making it both versatile and expressive.

Pour Over
Pour over brewing allows precise control over extraction by slowly introducing water to the grounds. Compared to Chemex, thinner filters increase body while preserving clarity. Therefore, this method highlights nuance, structure, and layered sweetness.
Recipe
- 16.5g coffee, grind #7 (Baratza Vario)
- 290ml water at 200°F
Steps
- Pour 60ml of water to saturate the grounds, then bloom for 20 seconds.
- Continue pouring steadily from the center outward.
- Stir lightly to ensure even extraction.
