Chemex

The Chemex is a pour-over coffee maker featuring a glass carafe and thick paper filters. By slowly pouring hot water over the coffee grounds, you extract flavors with clarity and brightness. This slower filtration produces a refined cup with delicate flavors and a clean, crisp finish, highlighting the coffee’s unique characteristics while maintaining a balanced profile.

Recipe
  • 25 g medium grind coffee

  • 400 ml water at 94–96 °C (201–205 °F)

Steps
  1. Rinse the filter
Place the Chemex filter in the brewer and rinse with hot water to remove paper taste and preheat the vessel. Discard the rinse water.

  2. Add ground coffee
Add 25 g of freshly ground coffee to the filter and level the coffee bed.

  3. Start timer & bloom
Pour 50–60 g of water to saturate the grounds evenly. Let it bloom for 45 seconds. Bubbles indicate CO₂ release for even extraction.

  4. Main pours
Slowly pour in stages until you reach 400 g total water:

    • Pour up to 200 g by 1:30

    • Pour to 300 g by 2:00

    • Pour to 400 g by 2:30
Use gentle spirals or pulses, keeping the water level even and avoiding the filter wall.

  5. Drawdown & finish
Allow the water to fully drain through. The brew should finish around 3:30–4:00 minutes.

    • If it runs too fast, use a finer grind next time.

Coffee Origins

Costa Rica

Costa Rica grows coffee at high altitudes with volcanic soil, producing bright and clean flavors. Coffees often feature citrus and floral notes with medium body. Strict quality standards and sustainable practices make Costa Rican coffee highly prized.

Tanzania

Tanzania produces highland Arabica coffee known for its bright acidity, medium body, and fruity flavors such as blackcurrant and citrus. Grown in nutrient-rich volcanic soils and carefully washed, these coffees offer a clean, vibrant, and well-balanced cup that is highly prized in specialty markets.

Light Roast

Light roast coffee highlights the true character of the beans, showcasing the unique flavors of their origin with minimal roast influence. It typically features a lively brightness, delicate body, and vibrant notes such as citrus, floral, or fruity accents. This roast level is celebrated for its clean, nuanced profile—perfect for our Light Roast Coffee Blend.
