The Cup

Grown at Finca Vajusa Azul in Costa Rica, this Sweet & Fruity Seasonal Feature Medium Light Roast showcases the vibrant clarity and tropical character that define the region. We roast it carefully to preserve its natural sweetness and structure, creating a lively and expressive cup from the first sip.

First, juicy notes of raspberry lead the profile. Then, bright pomelus citrus lifts the cup with sparkling acidity, while lush passionfruit adds tropical depth and sweetness. As these flavours unfold, they create a dynamic balance between brightness and round fruit character. Meanwhile, the medium light roast enhances transparency and elegance, resulting in a cup that feels refreshing, layered, and refined.

About the Coffee

Julio and Salomé, second-generation coffee growers, established Finca Vajusa Azul in 2004 with a strong commitment to quality and sustainability. Although they originally purchased the farm to produce ornamental plants, they quickly recognized the land’s exceptional potential for specialty coffee.

Over time, they intentionally designed a symbiotic growing system where ornamentals and coffee thrive together. Because of this approach, they significantly reduce agrochemical use while actively promoting healthier soil and greater biodiversity. Julio directs production with careful oversight at every stage, and Salomé leads administration and daily operations to ensure consistency and excellence.

Today, Finca Vajusa Azul cultivates a diverse range of high-quality coffees. As a result, each harvest delivers a distinctive and memorable experience in every cup.

Medium Light Roast

A medium light roast preserves origin character while actively highlighting sweetness and structure. By maintaining lively acidity and fruit expression, this roast level brings forward nuanced layers and elegant complexity. Consequently, the cup remains balanced, expressive, and refined.

Flavour Note

Sweet & Rich Coffee

Sweet & Fruity coffees deliver vibrant acidity supported by natural fruit sweetness. Bright raspberry and citrus tones intertwine with tropical notes to create clarity and lift. At the same time, subtle sweetness grounds the cup, producing a smooth yet energetic finish that feels both refreshing and satisfying.

 

Pour Over Hario V60

Pour over brewing involves slowly pouring hot water over coffee grounds in a filter, allowing full extraction of flavors and aromas. Compared to the Chemex, it uses thinner filters, resulting in a cup with more body while still highlighting the coffee’s unique nuances. In addition, the controlled pour emphasizes the bean’s subtle characteristics and complexity.

  • 15g coffee ground medium fine
  • 285ml water at 200°F
Steps
  1. Pour 60ml water to saturate the grounds, then let sit for 20 seconds.
  2. Add the remaining water in a steady pour, starting at the center and circling outward.
  3. Stir lightly for even extraction.
French Press

The French press is a full-immersion brewing method that produces a rich, full-bodied cup of coffee.

Coarsely ground coffee is steeped in hot water for several minutes, then separated using a metal mesh plunger. Because the coffee stays in contact with the water the entire time—and isn’t filtered through paper—it retains more oils and fine particles, giving it a heavier texture and deeper flavour.

It’s simple, consistent, and great for highlighting bold, well-rounded coffees.

  • 32g coffee ground medium fine
  • 505ml water at 200°F
Steps
  1. Pour 60ml water to saturate the grounds, then stir.
  2. Add the remaining water in a steady pour, starting at the center and circling outward.
  3. Steep for 4 minutes before serving.
Aeropress

The AeroPress is a versatile brewing method that uses gentle pressure to push water through coffee grounds, creating a smooth, clean cup.

Coffee is steeped briefly before being pressed through a paper (or metal) filter, which removes most oils and sediment. The result is a balanced brew with clarity, similar to drip coffee, but with the option to brew a more concentrated, espresso-style cup depending on the recipe.

It’s quick, portable, and highly adaptable—making it a favourite for experimenting with different brew styles.

  • 260ml water at 200°F
Steps
  1. Add coffee to aeropress, saturate grounds with 40-50ml of water and let bloom for about 20 seconds
  2. Add the remaining water in a steady pour, starting at the center and circling outward.
  3. Set the plunger in tightly without plunging. Let steep for a minute before plunging through.
