The Cup

Grown in the lush mountains of Tolima, Colombia, this 100% Castillo variety showcases the vibrant character and balance the region is known for. Roasted to a smooth medium, it offers a lively cup with notes of raspberry, chocolate, and jasmine — a beautiful interplay of fruit, florals, and sweetness.

Versatile and expressive, this coffee shines across drip, pour over, and espresso. As an espresso, it’s perfect for those who enjoy a bright, fruit-forward shot with a touch of floral complexity and rich chocolate depth.

About the Coffee

This is a beautiful natural processed coffee that our coffee partners in Tolima have produced. These associations are composed of approximately 175 coffee-farming families. Since 2019 we have provided technical assistance to farmers on natural processing and most of the growers we work with now process at least a 80% of their coffee as natural. Tolima department is characterized by its high mountains, fresh weather, and volcanic soil, making it perfect for cultivating exceptional coffee. The Tolima region is one of the most productive coffee-growing areas and has always been represented in the Cup of Excellence, organized by the Colombian Coffee Federation.

This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust. Our coffee undergoes a meticulous process to achieve peak flavor. After careful selection, the coffee was exposed to a dry aerobic fermentation of 24 hours before being placed inside Grainpro bags for 50 hours at a temperature below 22ºC. Then the cherries are laid out on raised beds or concrete patios to dry under the sun.

Brewing Recipes

Espresso

Espresso brews by forcing hot water under high pressure through finely ground beans, producing a strong, full-bodied shot topped with golden crema. Moreover, in addition to enjoying it on its own, espresso serves as the base for drinks such as cappuccino, latte, and Canadiano. This method emphasizes rich flavor and smooth texture in every cup.

Chemex

The Chemex is a pour-over coffee maker featuring a glass carafe and thick paper filters. By slowly pouring hot water over the coffee grounds, you extract flavors with clarity and brightness. Consequently, this slower filtration produces a refined cup with delicate flavors and a clean, crisp finish. Moreover, it highlights the coffee’s unique characteristics while maintaining a balanced and elegant profile.

Recipe
  • 28g medium-ground coffee
  • 500ml water at 200°F
Steps
  1. Prime the filter with hot water, then add the grounds evenly.
  2. Pour 70ml water over the grounds to saturate, stirring gently if needed.
  3. Continue pouring the remaining water slowly, starting at the center and circling outward.
Pour Over

Pour over brewing involves slowly pouring hot water over coffee grounds in a filter, allowing full extraction of flavours and aromas. Compared to the Chemex, it uses thinner filters, resulting in a cup with more body while still highlighting the coffee’s unique nuances. In addition, the controlled pour emphasizes the bean’s subtle characteristics and complexity.

  • 16.5g coffee ground on #7 (Baratza Vario)
  • 290ml water at 200°F
Steps
  1. Pour 60ml water to saturate the grounds, then let sit for 20 seconds.
  2. Add the remaining water in a steady pour, starting at the centre and circling outward.
  3. Stir lightly for even extraction.

Consequently, this roast level is widely loved for its smooth, approachable, and versatile profile.
